Vegan Chocolate Chip Cookies

Who doesn’t love the classic chocolate chip cookie? Once I started baking with healthier ingredients like no refined sugars, I realized desserts and treats like cookies don’t have to be bad for you! These cookies are super simple, easy to make and take no time at all to bake. My son also loves to help out with mixing all the ingredients together, and it’s a great starter recipe for your little helpers. Plus, these chocolate chip cookies are wheat-free for any allergies, as well as vegan. Anyone I’ve given these to had no idea until I told them that they were vegan. I’m not a fan of overly sweet treats, and I find these chocolate chip cookies have just the perfect amount of sweetness. Here is our go-to vegan chocolate chip cookie recipe.

Vegan chocolate chip cookies

Vegan Chocolate Chip Cookies (Wheat-free)

Ingredients

  • 1 1/2 cups Spelt Flour
  • 1/4 Coconut Sugar (you can use any unrefined sugar here, but I like the slight molasses-y flavour in coconut sugar)
  • 3/4 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Sea Salt
  • 1/4 cup Almond Milk (or any other non-dairy milk of your choice)
  • 1/4 cup Maple Syrup
  • 1/8 cup Oil (I used sunflower oil, but canola or melted coconut oil would also work)
  • 1 1/2 tsp Vanilla Extract
  • 1/4 tsp Molasses (optional)
  • 1/3 cup (generous) Chocolate Chips

Method

Pre-heat oven to 350 degrees F. In a large bowl, mix together all of the dry ingredients (flour, sugar, baking powder and soda, and sea salt). In a smaller bowl, mix together all of the wet ingredients (milk, maple syrup, oil, vanilla extract and molasses). Add the wet ingredients to the dry ingredients and stir just until well-mixed. Add the chocolate chips and stir to mix together. Place spoonfuls onto a baking sheet lined with parchment paper. I used smaller spoonfuls and got about 18-20 cookies, baking them on two different cookie sheets. If you place larger spoonfuls, you’ll get one dozen on just one sheet. Bake for 10-13 minutes (10 minutes for smaller cookies, 12-13 minutes for larger cookies). They might still seem soft when you take them out, but trust me, they are done! If you leave them any longer, the bottoms will be too brown. Remove from oven and let sit for just 1-2 minutes before placing on a rack or plate to cool. Enjoy!
