Well, hello Fall! I’ve been a bit absent here lately, and I apologize. Along with dealing with being sick this past month, life has just been a bit nutty. We are starting to get into our new rhythm though and we’re finally been experiencing some Fall temperatures! Not that I’m complaining as I do love the summer. But there’s something about cooler nights, falling leaves and cozy sweaters, right?
I love picking apples, making crumbles and pies, discovering hearty new soup recipes, and coming up with delicious new smoothie flavours. Now that Fall is definitely here, the berries of summer have been replaced with delicious and crispy apples and pears. I was looking at my Vitamix yesterday thinking about what kinds of Autumn smoothie ideas I could come up with. When I saw the batch of freshly picked apples lying beside, the answer was simple: apple pie smoothie!
Apple Pie Smoothie
This smoothie was a new one for me but luckily, it turned out absolutely perfectly delicious on my first try. Since both of the kids are big smoothie monsters as well, I try to always add in extras to our smoothies, like protein or greens so they’re extra healthy. For this apple pie smoothie, I added in Gay Lea’s Nordica vanilla bean smooth cottage cheese. Yep, cottage cheese. It is seriously so good in smoothies! I used it previously in my blueberry cheesecake smoothie, so I knew it would be good in this one. I like that’s not lumpy so it works well for mixing in things like breakfast granola and it makes the perfect addition to our smoothies. Plus, each serving has 10 grams of protein so it’s an easy protein-fix for all of this. The day I made this, little K decided she was not having dinner (a first for her!) but she ended up gobbling up this smoothie, so I was extra glad I’d added the cottage cheese.
An apple pie smoothie is the best Fall smoothie. Drink it for breakfast, as a snack, or even as an after-dinner treat. It has just the right amount of yummy fruit and spice mix and is creamy and sweet, but not too sweet. So far, it’s a hit!
